This weekend I experienced 14,000 reasons this idea was crazy!

This past weekend Julie talked me into joining her and Bekah as they climbed Mt. Bierstadt, one of Colorado’s 14ers (there are 54 mountain peaks over 14,000 ft above sea level). Julie had climbed Pikes Peak last month and apparently got hooked. She had been planning this trek with Bekah for a couple of weeks. I on the other hand had no intention of joining them. But one day, toward the end of last week, I expressed my concern about them going it alone and all of a sudden I was part of the expedition. Crazy Idea 6 Month Update

I really can’t believe it has been six months since we started this crazy idea. Some days it feels like it was just last week and some days it seems like it was so long ago. I know I’ve said it before, but I’m feeling better than I have in years. I can’t believe the difference in my energy level and how my body has changed (photos below). I’m still working out 4 days a week at Ed’s Gym – though some weeks it has only been 2 days due to travel and conferences and such.

As for our diet, we’ve stayed pretty much with a Paleo style diet – though we have added in a few cheats such as an occasional Nutella snack or corn based product.  We are still eating insane amounts of fruits and eggs and after six months show no signs of getting tired of those.  [Read more...]

Summertime Meal Paleo Style – Kabobs

Hey here is a crazy idea for a Summertime meal Paleo style. It’s perfect for a quick dinner. It’s totally paleo. It’s yummy and easy breezy for summer nights.

We had some friends over last week, and I concocted this idea for kabobs that is a little less expensive version than using steak. You use meatballs instead. I also used zucchini, something I hadn’t tried before. They came out delicious, and the kids loved them. You should totally try them.

4 Months of Craziness – Time for Another Update

I can’t believe that it has been 4 months of craziness since we started this thing. They say time flies when you’re having fun, and while not every minute has been fun, I can say that overall the experience has been a blast. A huge shout out and thanks to Ed from Ed’s Gym for all he has done to push me and keep me moving forward. Big thanks also to Julie and the kiddos for the motivation and support and for putting up with some of the not-so-stellar days. And to everyone reading the blog and engaging on Facebook and Twitter. So many of you have shared encouraging words and your own updates. It’s been great knowing that some of you are also taking on your own crazy ideas.

So, here’s the down and dirty. A report on the progress since Jan 8.  (You can also check out the 30 day and 60 day comparisons)

Waist at umbillicus: Day 1: 48.75, Day 120: 40.5, Difference -8.25 inches

Hips: Day 1: 42.5, Day 120: 41.5, Difference -1 inches

Chest: Day 1: 47, Day 120: 42.75, Difference -4.25 inches

Around Shoulders: Day 1: 54, Day 120: 48.5, Difference -5.5 inches

Mid Thigh: Day 1: 23.25, Day 120: 23, Difference -.25 inches

Bicep: Day 1: 15, Day 120: 13.5, Difference -1.5 inches

Neck: Day 1: 17.75, Day 120: 16.25, Difference -1.5 inch

That’s a grand total of 22 inches lost in 120 days.

When I stepped on the scales Day 1 I weighed in at 263.8 pounds, today I stepped on the scales and weighed in at 223.4. I’ve lost 40.4 pounds in 120 days.

I can’t believe how much better I’m feeling and how much more energy I have. As I mentioned last week in a post, I feel like I’ve hit a bit of a plateau with the weight loss. Time to keep my eyes on the long term goals and keep at it.

60 Days – Over 30 pounds and 13 inches

It’s really hard to believe that I am 60 days into this crazy idea I had about getting in shape and making some huge lifestyle changes, but I am. First, a huge thanks to everyone who has helped along the way. Julie and the kids, Ed at Ed’s Gym and everyone who works out there with me, and everyone who has read, commented and shared here on the blog and on all the social media platforms, your support has kept me going on the days I didn’t want to go to the gym and wanted to eat junk.

I’m making progress towards my goals and wanted to give everyone an update on where I am 60 days in. Here is a comparison between day one and today. If you want the 30 day comparison you can find it here.

Waist at umbillicus: Day 1: 48.75, Day 60: 43.75, Difference -5 inches

Hips: Day 1: 42.5, Day 60: 41, Difference -1.5 inches

Chest: Day 1: 47, Day 60: 44.25, Difference -2.75 inches

Around Shoulders: Day 1: 54, Day 60 51.75, Difference -2.25 inches

Mid Thigh: Day 1: 23.25, Day 60: 23, Difference -.25 inches

Bicep: Day 1: 15, Day 60: 14.25, Difference -.75 inches

Neck: Day 1: 17.75, Day 60: 16.75, Difference -1 inch

 

That’s a grand total of 13.5 inches lost in 60 days.

When I stepped on the scales Day 1 I weighed in at 263.8 pounds, today I stepped on the scales and saw the number 232.2. I’ve lost 31.6 pounds in 60 days.

I’m really excited about the progress I’m making – not only are the numbers dropping, but I’m feeling better and better and getting stronger. I’ve almost reached my weight goal to start running. Hopefully, I’ll be there in a couple of weeks.

A Number I Haven’t Seen For 12 Years

I’m approaching 60 days into this crazy idea and I can’t wait to do a full update on new measurements and progress. The past few weeks have been a little crazy. Due to travel and sickness I missed several workouts at Ed’s Gym, but this week I have been able to get back into the swing of things. But I’m back in the gym this week and it feels great. I hit a milestone this morning and just had to share it before we hit the 60 day mark. When I stepped on the scales this morning I hit a number I’ve been waiting for. It wasn’t a huge number, but it was a number I hadn’t seen for 12 years. I’m not telling you what that number is – it’s to close to the 60 day mark, but I was really excited. Instead, I want to share a photo I posted on Facebook last week that received a few comments and a photo from last fall.

 

 

 

 

 

 

 

 

 

Sometimes you don’t see the changes day to day, and it can get frustrating. When you don’t see the immediate changes you wonder if it is worth it, you wonder if change is really happening. Sometimes it’s nice look back a little further and see the progress. I’m getting close to my goal for 60 days and the target weight I set to start doing some running. It looks like that 5K is getting closer and closer. I need to pick one in the next couple of weeks.

No Leftover Paleo Chicken Soup

Well, we are almost two weeks post Whole 30 and our family is still sticking to our new paleo life-style pretty well. We have opted for some organic low sugar salad dressing options—mainly so Jeff will still continue to eat salad (he swore off balsamic vinegar and oil completely after having it so much on the Whole 30). So you could say we are all about making healthy compromises right now. For me it is having white potatoes every couple of weeks.

Here is a recipe based on a Paleo chicken soup I found in the Paleo Comfort Foods cookbook. I tweaked it just a bit to make it a little more family friendly. This soup has become a huge hit! The kids love it and it is a great option for cold, Colorado evenings.  And I love it because I get to use bacon grease! I thought it would be really hard to eat chicken soup without noodles, but you know what, this is so tasty you don’t even miss them. I increased the amount of chicken called for in the original recipe to give it some bulk, so that we feel full after eating it. [Read more...]

Finished the Whole 30 – 30 Days, 20 Pounds and 9 Inches

I can’t believe we did it! We made it through the first month of this Crazy Idea, our family just finished the Whole 30, and I survived my first month at Ed’s Gym. I actually did more than survive and am starting to see some results. Last night Ed took my measurements again and this morning I got on the scales to see how much weight I had lost.  Day one I weighed in at 263.8. This morning 243.6. For a total of 20.2 pounds. Needless to say I was pretty excited.  Here are the before and after measurements:

Waist at umbilicus: Before-48.75, After 46.5, Difference-2.25 inches

Hips: Before- 42.5, After 41.5, Difference- 1 inch

Chest: Before-47, After 45.75, Difference- 1.25 inches

Around Shoulders: Before-54, After-51, Difference- 3 inches

Bicep: Before-15, After-14, Difference- 1 inch

Neck: Before- 17.75, After- 16.75, Difference- 1 inch

For a grand total of 9.5 inches (10 if you round up and that would have looked much better in the title)

Signs This Mom Is Serious About Healthy Food

My kitchen has changed. Two weeks into our life-style change, I wanted to give you some visuals of how how it looks and functions now. Maybe this will inspire some other moms out there who may be holding out on making a healthy food-shift for their families due to the same reason excuse I did for so many years- convenience.

This is where my toaster once was. We used it daily to toast pop tarts or waffles for the kids to eat for a quick breakfast. This weekend I had Jeff move it out. I needed the counter space. It made a great spot for my crock pot. This is a picture of a YUMMY roast I fixed for Sunday dinner, minus the potatoes. Just pot roast, onions, celery, carrots, and peppers. [Read more...]
