Paleo Curry Chicken Wraps

Need something for dinner in a hurry? Just say chicken curry!

This is easy and fast to make. I wanted to try something new by using my curry spice and this turned out great. Jessa announced to us tonight that she has a new favorite dish. The whole family loved these paleo curry chicken wraps.

 Paleo Curry Chicken Wraps

Prep time 10 minutes

Cooking time 10 minutes

5 boneless skinless chicken breasts (sliced)

2 table spoons of chili powder

1 table spoon of curry

1/2 table spoon of garlic powder

1/2 teaspoon of italian seasoning

a dash of crushed red pepper (more or less depending on how hot you like it)

salt and pepper to taste

2 table spoons of coconut oil

1 head of butter lettuce

diced tomatoes

3 green onions chopped

1 avocado sliced

Empty chili powder, curry, garlic powder, Italian seasoning, red pepper and salt and pepper in a large zip lock bag. Toss in the chicken, close bag, and coat chicken by shaking.

In a large skillet over medium heat, melt coconut oil and cook chicken strips in the skillet. Cook about 10 minutes, turning chicken until it is white all the way through.

Serve on lettuce leaves with tomatoes, onions and avocados.

Yum. Yum.

Ten Things I Learned: #7 Eating Healthy Is Expensive But Worth It

I really can’t believe it has been almost a year since our family joined in on Jeff’s Crazy Idea. Some days the kids would say it seems like 20 years. Some days, not long at all.

I have learned some things that I had no idea about twelve months ago.

Like bacon and guacamole taste fantastic together. Who knew? Seriously, did you?

But the one thing I am asked about constantly is “Doesn’t it cost a ton of money to eat well?”  The excuse I gave, and hear often when we talk about our lifestyle change is is this one:

“Our family simply can’t afford to eat that way.”

Farmer’s Market Virgins

Friends, we are turning into hippies. Bonified Colorado Hippies. All of this eating healthy, organic food has left me wondering sometimes who the heck we have turned into since January. Jeff wasn’t the only one who has gone crazy. It has now crept into our whole family.

Just to prove it to you, our daughter turned down a box a Milk Duds at youth group last week. This shows you how far the insanity reaches. Our once little sugar addict, turned down candy. FROM CHURCH.

This month we took it to a whole new level. We went to the local farmer’s market. Don’t laugh. This is a world we had no clue about until recently. And boy were we missing out!

20 Lunch Box Ideas for Paleo Kids

A couple  weeks ago I posted about how our family was preparing for back to school paleo style. Many of you messaged me about specific ideas for your kid’s lunches. Like I mentioned in the earlier post, eating paleo is weird. It is not mainstream. Convience and processed foods have taken over the school lunch, I know because I was guilty of this for years. Red Cabbage Chicken Salad Recipe

Since Jeff started this crazy idea you have been telling us you love it when I post recipes. So here is a great paleo red cabbage chicken salad recipe that is really filling, and when paired with some fresh fruit makes a great lunch or dinner.

Grandma is a big cabbage fan and she loved this. It is healthy, easy and yummy goodness. The food processor is your friend for this dish! When I prepared this I made a little extra because the leftovers are an easy lunch for the next day.

Here’s what goes in it:

  • 1 head of red cabbage cut for salad
  • 1 diced pink lady apple
  • 1 handful of organic raisins
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pecans
  • 1 tablespoon of oregano
  • 1 cup of chopped grilled chicken (for convenience I used Kirkland’s Grilled Chicken Breast Strips from Costco)
  • 4 table spoons of extra-virgin olive oil
  • 3 table spoons of balsamic vinegar
  • Salt and pepper to taste

You can serve this right after you make it or refrigerate it until chilled.

Back To School Paleo Style

This time of year is always challenging. On top of all the clothes shopping and supply buying, going back to school Paleo style presents it’s own unique pitfalls.

Since Jeff had his Crazy Idea and we changed our whole lives last January, one thing that has been remained constant is our dedication to eating healthier as a family.

Right now I would say we eat paleo 95% of the time. Even more this month, since Jeff is doing a 2nd Whole 30 and I am trying my best to support him.

As we approached back to school with our kids, we needed to have a plan. Here are some tips we have come up with to keep your family on track as the busy fall days begin.

1. Plan your meals, plan your meals, plan your meals. This time of year is easy to throw your hands up and say, lets get McDonald’s or pizza tonight. If you plan your meals, hopefully you’ll resist this tempation. For us this week it looked like this….

I cut up all of my veggies for a roast I was fixing in the crock pot this week. I also thawed out all of my meat for the week, and physically wrote down what we were having for dinner each evening. [Read more...]

Beef, It’s What’s is for Dinner on this Whole 30!

This week I fixed this fantastic recipe for a steak cilantro lime marinade for the family. Jeff found it on Chow Stalker. We fell in love with it.

I did make a few modifications you should note.

I used a tri-tip rather than a flank steak, and I cooked the steak in a cast iron skillet in the oven at 450 degrees for 90 minutes. Yum yum.

I served it with grilled zucchinis (just brush with olive oil and Italian seasoning and put on the grill) and…

sweet potato fries that I made by shaking them in this mix in a ziplock bag:

  • 1/2 cup of olive oil
  • 1 tbs of cumin (OK maybe I sometimes use more)
  • 1/2 tsp of pepper
  • 1 tsp of salt

I have tried many different versions of sweet potatoes fries from various paleo web sites and cook books. This one I came up with myself through trial and error. It is by far my favorite.

Here is a picture before they went in the oven.

I cooked the sweet potato fries at 450 degrees for 1 hour (turning them over once 1/2 through). If they weren’t cooking in the stove, with the steak I am sure they would not have taken this long.

So that is just some of the food we have been eating on this Whole 30.

Crazy Idea 6 Month Update

I really can’t believe it has been six months since we started this crazy idea. Some days it feels like it was just last week and some days it seems like it was so long ago. I know I’ve said it before, but I’m feeling better than I have in years. I can’t believe the difference in my energy level and how my body has changed (photos below). I’m still working out 4 days a week at Ed’s Gym – though some weeks it has only been 2 days due to travel and conferences and such.

As for our diet, we’ve stayed pretty much with a Paleo style diet – though we have added in a few cheats such as an occasional Nutella snack or corn based product.  We are still eating insane amounts of fruits and eggs and after six months show no signs of getting tired of those.  [Read more...]

Summertime Meal Paleo Style – Kabobs

Hey here is a crazy idea for a Summertime meal Paleo style. It’s perfect for a quick dinner. It’s totally paleo. It’s yummy and easy breezy for summer nights.

We had some friends over last week, and I concocted this idea for kabobs that is a little less expensive version than using steak. You use meatballs instead. I also used zucchini, something I hadn’t tried before. They came out delicious, and the kids loved them. You should totally try them.
